Chef's Marinade

Worcestershire-Teriyaki Marinade

Chef's Marinade

4 cups orange juice
1 cup soy sauce
2 tablespoons chopped garlic
1/2 cup Dijon mustard
1/2 cup honey
1 teaspoon cayenne pepper

Whisk all ingredients together until well blended.


Chicken Marinade

3 cans chicken-broth (about 30 ounces)
1/8 cup lemon pepper
2 bay leaves
2 sprigs fresh rosemary
Juice of 3 fresh lemons
1 tablespoon cracked black pepper
1 1/2 cups white wine
2 teaspoons salt

Mix ingredients together and refrigerate until ready for use


Garlic & Herb Marinade

1/2 cup Worcestershire Sauce
1/4 cup olive oil
1/4 apple cider vinegar
1/4 cup chopped fresh basil or oregano leaves
2 tablespoons finely chopped garlic
1/4 teaspoon salt

Combine all ingredients. Reserve 1/4-cup marinade, refrigerator. In large shallow non-aluminum baking dish or plastic bag, marinate your favorite steaks in refrigerator, turning occasionally 3 to 24-hours. Remove steaks discard Marinade. Grill or broil steaks brushing with reserve marinade until desired doneness. (Makes 1 cup)


Lan Eng's Chinese Marinade

2 tablespoons Hoisin sauce
1/2 cup soy sauce
2 tablespoons honey

Mix together ingredients for 8 to 10-pork chops or equivalent pork ribs. Marinade for 30-minutes or over night.


Pork Marinade

1/2 cup chopped scallions
1 tablespoon salt
1 tablespoon black pepper
1/3 cup lime juice
1/4 cup Dijon mustard
1/4 cup red wine vinegar
1/4 cup orange juice
2 tablespoons dried rosemary
2 tablespoons chopped Italian parsley
1 cup of basil leaves, fresh
1/4 cup fresh thyme, stems removed

Combine above ingredients and process into a paste-like mix.


Pork Marinade

1/2 cup white wine
1/2 apple juice
1/2 cup orange juice
2 cloves sliced garlic
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves

Mix all ingredients together. Refrigerate for 24-hours.


Worcestershire-Teriyaki Marinade

1/2 cup Worcestershire Sauce
1/4 cup rice wine or white vinegar
3 tablespoons honey
2 tablespoons dry sherry
2 tablespoons vegetable oil
2 tablespoons soy sauce
1/4 teaspoon ground ginger

Mix all ingredients
